Ingredients
- 12 oz (340g) fettuccine pasta
- 2 tbsp unsalted butter
- 1 tbsp olive oil
- 2 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
- 2 tbsp chopped parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente. Reserve 1/2 cup of pasta water, then drain.
- In a large skillet over medium heat, melt butter with olive oil. Add minced garlic and sauté for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Reduce heat and stir for 2–3 minutes until slightly thickened.
- Add Parmesan cheese gradually, stirring constantly until melted and the sauce becomes smooth and creamy.
- Season with salt, pepper, and nutmeg (if using). If the sauce becomes too thick, add reserved pasta water a little at a time until desired consistency is reached.
- Add cooked pasta to the skillet and toss to coat evenly with the sauce.
- Serve immediately, garnished with chopped parsley and extra Parmesan cheese if desired.

- Use freshly grated Parmesan for the smoothest, most flavorful sauce.
- Add cooked chicken, shrimp, or broccoli for a heartier meal.
