Ingredients

    • 1 1/2 cups graham cracker crumbs
    • 6 tbsp melted butter
    • 2 tbsp sugar

    • 24 oz cream cheese, softened
    • 3/4 cup sugar
    • 3 large eggs
    • 1/2 cup sour cream
    • 1 tbsp vanilla extract

 

    • Apple Layer:
    • 3 cups peeled diced apples
    • 1/4 cup brown sugar
    • 1 tsp cinnamon
    • 1/4 tsp nutmeg
    • 1 tbsp lemon juice

 

  • Crisp Topping:
  • 3/4 cup oats
  • 1/2 cup flour
  • 1/3 cup brown sugar
  • 1/2 tsp cinnamon
  • 1/4 cup cold butter, cubed


Instructions

  1. Preheat oven to 325°F (160°C). Grease or line a 9-inch springform pan.
  2. Mix graham crumbs, melted butter, and sugar; press into pan and bake 8 minutes. Cool.
  3. Prepare apples: toss apples with brown sugar, cinnamon, nutmeg, and lemon juice. Set aside.
  4. Prepare cheesecake filling: beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream and vanilla.
  5. Pour cheesecake batter over crust.
  6. Distribute apple mixture evenly over cheesecake.
  7. Make crisp topping: combine oats, flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over apples.
  8. Bake 55–70 minutes, until center is mostly set with slight jiggle.
  9. Cool completely, then chill at least 4 hours before slicing.
