- 1 1/2 cups graham cracker crumbs
- 6 tbsp melted butter

- 3 large eggs

- 1 tbsp vanilla extract

- 3 cups peeled diced apples
- 1/4 cup brown sugar
- 1 tsp cinnamon
- 1/4 tsp nutmeg
- 1 tbsp lemon juice
- Crisp Topping:
- 3/4 cup oats
- 1/2 cup flour
- 1/3 cup brown sugar
- 1/2 tsp cinnamon
- 1/4 cup cold butter, cubed
Instructions
- Preheat oven to 325°F (160°C). Grease or line a 9-inch springform pan.
- Mix graham crumbs, melted butter, and sugar; press into pan and bake 8 minutes. Cool.
- Prepare apples: toss apples with brown sugar, cinnamon, nutmeg, and lemon juice. Set aside.
- Prepare cheesecake filling: beat cream cheese and sugar until smooth. Add eggs one at a time, then sour cream and vanilla.
- Pour cheesecake batter over crust.
- Distribute apple mixture evenly over cheesecake.
- Make crisp topping: combine oats, flour, brown sugar, and cinnamon. Cut in butter until crumbly. Sprinkle over apples.
- Bake 55–70 minutes, until center is mostly set with slight jiggle.
- Cool completely, then chill at least 4 hours before slicing.
