Description

Baked Potato Chicken and Broccoli Casserole is a hearty, comforting dish made with tender chicken, roasted potatoes, broccoli florets, and plenty of cheese—all baked together in a creamy, flavorful sauce.


Ingredients

  • 3 cups diced potatoes
  • 2 cups cooked chicken, shredded or cubed
  • 2 cups broccoli florets
  • 1 cup shredded cheddar cheese
  • 1/2 cup mozzarella cheese
  • 1 cup sour cream
  • 1/2 cup heavy cream or milk
  • 1 tbsp olive oil
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • 1 tsp paprika
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • Green onions for garnish (optional)


Instructions

  1. Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
  2. Toss diced potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
  3. Steam or microwave broccoli until just tender (2–3 minutes).
  4. In a bowl, mix sour cream, heavy cream, onion powder, and half of the cheddar cheese.
  5. Combine roasted potatoes, chicken, and broccoli in the baking dish.
  6. Pour the creamy mixture over the casserole and stir to coat evenly.
  7. Top with remaining cheddar and mozzarella cheese.
  8. Bake for 20–25 minutes, or until bubbly and golden.
  9. Garnish with green onions and serve warm.
