Ingredients
- 3 cups diced potatoes
- 2 cups cooked chicken, shredded or cubed
- 2 cups broccoli florets
- 1 cup shredded cheddar cheese
- 1/2 cup mozzarella cheese
- 1 cup sour cream
- 1/2 cup heavy cream or milk
- 1 tbsp olive oil
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp paprika
- 1/2 tsp salt
- 1/2 tsp black pepper
- Green onions for garnish (optional)
Instructions
- Preheat oven to 400°F (200°C). Grease a 9×13-inch baking dish.
- Toss diced potatoes with olive oil, paprika, garlic powder, salt, and pepper. Spread on a baking sheet and roast for 20 minutes.
- Steam or microwave broccoli until just tender (2–3 minutes).
- In a bowl, mix sour cream, heavy cream, onion powder, and half of the cheddar cheese.
- Combine roasted potatoes, chicken, and broccoli in the baking dish.
- Pour the creamy mixture over the casserole and stir to coat evenly.
- Top with remaining cheddar and mozzarella cheese.
- Bake for 20–25 minutes, or until bubbly and golden.
- Garnish with green onions and serve warm.

- Use rotisserie chicken for faster prep.
- Add bacon for extra flavor.
- Substitute Greek yogurt for sour cream for a lighter version.
