Ingredients

  • 1 baguette, sliced into 1/2-inch rounds
  • 2 tbsp olive oil (for brushing)
  • 4 oz goat cheese, softened
  • 1 cup fresh blueberries
  • 2 tbsp balsamic vinegar
  • 1 tbsp honey or maple syrup
  • 1/4 tsp black pepper
  • 1/4 tsp salt
  • Fresh thyme or basil for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Arrange baguette slices on a baking sheet.
  2. Brush each slice lightly with olive oil and bake for 8–10 minutes or until golden and crisp.
  3. In a small saucepan, combine blueberries, balsamic vinegar, honey, salt, and pepper. Heat over medium until blueberries soften and the mixture thickens slightly (about 5 minutes).
  4. Spread a generous layer of goat cheese onto each toasted crostini.
  5. Spoon warm balsamic blueberry mixture on top.
  6. Garnish with fresh thyme or basil.
  7. Serve immediately.
