Description
Bang Bang Chicken Fried Rice is a bold, flavorful fusion of classic fried rice with creamy, spicy Bang Bang sauce — loaded with tender chicken, veggies, and a kick of heat in every bite.
Ingredients
- 2 cups cooked jasmine rice (preferably chilled)
- 1 lb boneless skinless chicken breast, diced
- 2 tbsp vegetable oil (divided)
- 2 eggs, lightly beaten
- 1 cup frozen mixed vegetables (peas, carrots, corn)
- 3 green onions, chopped
- 2 cloves garlic, minced
- 2 tbsp soy sauce
- 1 tbsp oyster sauce
- 1 tsp sesame oil
- Salt and pepper to taste
- 1/4 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp Sriracha (adjust to taste)
- 1 tbsp honey
Instructions
- In a small bowl, whisk together mayonnaise, sweet chili sauce, Sriracha, and honey to make the Bang Bang sauce. Set aside.
- Heat 1 tablespoon of vegetable oil in a large skillet or wok over medium-high heat.
- Add diced chicken, season with salt and pepper, and cook for 5–6 minutes until golden and cooked through. Remove from the pan and set aside.
- Add remaining oil to the pan. Scramble eggs until just set, then push to one side of the skillet.
- Add garlic and mixed vegetables to the other side and stir-fry for 2–3 minutes.
- Add the cooked rice and toss everything together. Pour in soy sauce, oyster sauce, and sesame oil. Stir well to combine.
- Return the cooked chicken to the pan and mix thoroughly.
- Drizzle the Bang Bang sauce over the fried rice and toss until evenly coated and heated through.
- Top with chopped green onions and serve immediately.
Notes
- Use day-old rice for best texture — it prevents clumping and makes for crispier fried rice.
- Adjust spice level by adding more or less Sriracha to the sauce.
- Substitute shrimp or tofu for chicken for variation.
- Can be made with brown rice or cauliflower rice for a lighter version.
