Ingredients

  • 1 1/2 lbs (680g) boneless, skinless chicken breasts or thighs
  • 1 medium onion, diced
  • 2 medium carrots, sliced
  • 2 celery stalks, chopped
  • 3 cups chicken broth
  • 1 can (10.5 oz) cream of chicken soup
  • 1 tsp garlic powder
  • 1 tsp dried thyme
  • 1/2 tsp black pepper
  • 1/2 tsp salt
  • 1 cup frozen peas (optional)
  • 1 can (16 oz) refrigerated biscuit dough, cut into small pieces
  • 2 tbsp unsalted butter (optional, for richness)
  • 2 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Place chicken breasts, onion, carrots, celery, chicken broth, cream of chicken soup, garlic powder, thyme, salt, and pepper into the slow cooker. Stir to combine.
  2. Cover and cook on low for 6–7 hours or on high for 3–4 hours, until chicken is tender.
  3. Remove the chicken, shred it with two forks, and return it to the slow cooker.
  4. Add frozen peas and stir to combine (if using).
  5. Place biscuit dough pieces on top of the mixture in an even layer. Gently press them down so they touch the liquid but don’t stir.
  6. Cover and cook on high for another 1 hour, or until the dumplings are cooked through and fluffy.
