Description

Classic Boston Cream Donuts featuring fluffy fried donuts filled with smooth vanilla pastry cream and topped with rich chocolate glaze.


Ingredients

  • 3 cups all-purpose flour
  • 1/4 cup granulated sugar
  • 2 1/4 teaspoons active dry yeast
  • 3/4 cup whole milk, warm
  • 2 large eggs
  • 1/4 cup unsalted butter, melted
  • 1/2 teaspoon salt
  • Vegetable oil, for frying
  • 2 cups whole milk (for pastry cream)
  • 1/2 cup granulated sugar (for pastry cream)
  • 4 egg yolks
  • 1/4 cup cornstarch
  • 1 teaspoon vanilla extract
  • 4 oz semi-sweet chocolate
  • 1/2 cup heavy cream


Instructions

  1. In a bowl, combine warm milk, yeast, and sugar; let bloom for 5 minutes.
  2. Add eggs, melted butter, salt, and flour. Mix and knead until smooth.
  3. Cover dough and let rise for 1–1.5 hours until doubled.
  4. Roll dough out and cut into rounds. Let rest 30 minutes.
  5. Fry donuts in 350°F (175°C) oil until golden on both sides. Drain and cool.
  6. For pastry cream, heat milk until steaming.
  7. Whisk sugar, egg yolks, and cornstarch, then slowly add hot milk.
  8. Cook mixture until thickened, remove from heat, and stir in vanilla. Cool completely.
  9. Heat heavy cream and pour over chocolate; stir until smooth.
  10. Fill donuts with pastry cream and dip tops in chocolate glaze.
