Description
Classic Boston Cream Donuts featuring fluffy fried donuts filled with smooth vanilla pastry cream and topped with rich chocolate glaze.
Ingredients
- 3 cups all-purpose flour
- 1/4 cup granulated sugar
- 2 1/4 teaspoons active dry yeast
- 3/4 cup whole milk, warm
- 2 large eggs
- 1/4 cup unsalted butter, melted
- 1/2 teaspoon salt
- Vegetable oil, for frying
- 2 cups whole milk (for pastry cream)
- 1/2 cup granulated sugar (for pastry cream)
- 4 egg yolks
- 1/4 cup cornstarch
- 1 teaspoon vanilla extract
- 4 oz semi-sweet chocolate
- 1/2 cup heavy cream
Instructions
- In a bowl, combine warm milk, yeast, and sugar; let bloom for 5 minutes.
- Add eggs, melted butter, salt, and flour. Mix and knead until smooth.
- Cover dough and let rise for 1–1.5 hours until doubled.
- Roll dough out and cut into rounds. Let rest 30 minutes.
- Fry donuts in 350°F (175°C) oil until golden on both sides. Drain and cool.
- For pastry cream, heat milk until steaming.
- Whisk sugar, egg yolks, and cornstarch, then slowly add hot milk.
- Cook mixture until thickened, remove from heat, and stir in vanilla. Cool completely.
- Heat heavy cream and pour over chocolate; stir until smooth.
- Fill donuts with pastry cream and dip tops in chocolate glaze.
