Description
A simple, comforting broccoli pasta dish tossed in a light garlic-parmesan sauce, perfect for a quick weeknight meal.
Ingredients
- 8 oz pasta (penne or spaghetti)
- 3 cups broccoli florets
- 3 tbsp olive oil
- 3 garlic cloves, minced
- 1/2 cup grated Parmesan cheese
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper, to taste
- 1/2 cup pasta water (reserved)
Instructions
- Bring a pot of salted water to a boil and cook pasta according to package instructions.
- Add broccoli florets to the pot during the last 3 minutes of cooking.
- Reserve 1/2 cup of the pasta water, then drain pasta and broccoli.
- In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
- Add pasta and broccoli to the skillet and toss to combine.
- Stir in Parmesan cheese and a splash of reserved pasta water until a light sauce forms.
- Season with salt, pepper, and red pepper flakes if using.
- Serve warm in a bowl, topped with extra Parmesan if desired.
Notes
- Add grilled chicken or shrimp for extra protein.
- Use whole-wheat pasta for added fiber.
- A squeeze of lemon brightens the dish.
