Description

A simple, comforting broccoli pasta dish tossed in a light garlic-parmesan sauce, perfect for a quick weeknight meal.


Ingredients

  • 8 oz pasta (penne or spaghetti)
  • 3 cups broccoli florets
  • 3 tbsp olive oil
  • 3 garlic cloves, minced
  • 1/2 cup grated Parmesan cheese
  • 1/4 tsp red pepper flakes (optional)
  • Salt and black pepper, to taste
  • 1/2 cup pasta water (reserved)


Instructions

  1. Bring a pot of salted water to a boil and cook pasta according to package instructions.
  2. Add broccoli florets to the pot during the last 3 minutes of cooking.
  3. Reserve 1/2 cup of the pasta water, then drain pasta and broccoli.
  4. In a large skillet, heat olive oil over medium heat and sauté garlic until fragrant, about 1 minute.
  5. Add pasta and broccoli to the skillet and toss to combine.
  6. Stir in Parmesan cheese and a splash of reserved pasta water until a light sauce forms.
  7. Season with salt, pepper, and red pepper flakes if using.
  8. Serve warm in a bowl, topped with extra Parmesan if desired.

Notes

  • Add grilled chicken or shrimp for extra protein.
  • Use whole-wheat pasta for added fiber.
