Description

Bruschetta Chicken Pasta is a fresh and flavorful dish that combines tender grilled or sautéed chicken with pasta tossed in a bright bruschetta mix of tomatoes, garlic, basil, balsamic, and olive oil.


Ingredients

  • 8 oz pasta (penne, bowtie, or spaghetti)
  • 2 cups cooked chicken, sliced or diced
  • 2 cups cherry tomatoes, halved
  • 3 garlic cloves, minced
  • 1/4 cup fresh basil, chopped
  • 2 tbsp balsamic vinegar
  • 3 tbsp olive oil
  • 1/2 cup grated Parmesan cheese
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper


Instructions

  1. Cook pasta according to package directions; drain and set aside.
  2. In a bowl, combine tomatoes, garlic, basil, olive oil, balsamic vinegar, salt, pepper, and Italian seasoning. Let marinate 5–10 minutes.
  3. Heat a skillet over medium heat and warm the cooked chicken.
  4. Add cooked pasta and the bruschetta mixture to the skillet; toss gently.
  5. Sprinkle Parmesan cheese and toss again until warmed through.
  6. Serve warm or slightly chilled, garnished with extra basil.
