Description

Soft and tender strawberry sweet biscuits baked in a pool of melted butter for a rich, golden crust. These butter swim biscuits are bursting with fresh strawberries and perfect for breakfast or dessert.


Ingredients

  • 2 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 1 tbsp baking powder
  • 1/2 tsp salt
  • 1 3/4 cups buttermilk
  • 1 tsp vanilla extract
  • 1 cup fresh strawberries, diced
  • 1/2 cup unsalted butter, melted
  • 1/2 cup powdered sugar (optional glaze)
  • 1-2 tbsp milk (for glaze)


Instructions

  1. Preheat oven to 450°F (230°C).
  2. Pour melted butter into an 8×8-inch baking dish, spreading evenly to coat the bottom.
  3. In a large bowl, whisk together flour, sugar, baking powder, and salt.
  4. Stir in buttermilk and vanilla extract until just combined.
  5. Gently fold in diced strawberries.
  6. Spread the dough evenly over the melted butter in the baking dish.
  7. Score the unbaked dough into 9 squares for easier cutting after baking.
  8. Bake for 20-25 minutes until golden brown on top.
  9. Cool slightly, drizzle with optional powdered sugar glaze, and serve warm.
