Ingredients
- 1 sheet puff pastry, thawed
- 2 large onions, thinly sliced
- 2 tbsp olive oil or butter
- 1 tsp sugar
- 1/2 tsp salt
- 1/4 tsp black pepper
- 4 oz (115g) goat cheese, softened
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 1 egg, beaten (for egg wash)
- 1 tbsp balsamic glaze (optional, for drizzling)
Instructions
- Caramelize the Onions: Heat olive oil or butter in a skillet over medium-low heat. Add sliced onions, sugar, salt, and pepper. Cook slowly for 25–30 minutes, stirring occasionally, until onions are golden brown and soft. Set aside to cool slightly.
- Assemble the Tarts: Preheat oven to 400°F (200°C). Roll out the puff pastry on a floured surface and cut into 6 equal rectangles or circles. Place on a parchment-lined baking sheet. Spread a small amount of goat cheese on each piece, then top with a spoonful of caramelized onions. Sprinkle with thyme.
- Bake and Serve: Brush pastry edges with beaten egg and bake for 15–18 minutes, or until puffed and golden brown. Drizzle with balsamic glaze if desired and serve warm or at room temperature.
