Description
A comforting cheesy chicken broccoli rice casserole made with tender chicken, fluffy rice, and broccoli baked in a creamy cheese sauce until bubbly and golden.
Ingredients
- 2 cups cooked chicken breast, shredded or diced
- 2 cups cooked white rice
- 2 cups broccoli florets (fresh or frozen)
- 2 tbsp unsalted butter
- 1 small onion, finely chopped
- 2 cloves garlic, minced
- 2 tbsp all-purpose flour
- 1 1/2 cups milk
- 1 cup chicken broth
- 2 cups shredded cheddar cheese, divided
- 1/2 cup grated Parmesan cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1/2 tsp dried thyme
- 1/2 cup breadcrumbs (optional topping)
- 1 tbsp olive oil or melted butter (for topping)
Instructions
- Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- If using fresh broccoli, blanch the florets in boiling water for 2–3 minutes, then drain well.
- In a large skillet, melt butter over medium heat. Add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
- Sprinkle flour over the onion mixture and whisk for 1 minute to create a roux.
- Gradually whisk in the milk and chicken broth. Cook for 3–5 minutes, stirring constantly, until the sauce thickens.
- Add salt, pepper, paprika, and thyme. Stir in 1 1/2 cups of cheddar cheese and the Parmesan cheese until melted and smooth.
- In a large bowl, combine cooked chicken, rice, broccoli, and cheese sauce. Mix well.
- Transfer the mixture to the prepared baking dish and spread evenly.
- Top with the remaining 1/2 cup cheddar cheese. If using breadcrumbs, mix them with olive oil or melted butter and sprinkle on top.
- Bake uncovered for 25–30 minutes until hot, bubbly, and lightly golden on top.
- Allow the casserole to rest for 5–10 minutes before serving.

- Rotisserie chicken works well for a quick and flavorful shortcut.
- Brown rice can be used instead of white rice for added fiber.
- Add mushrooms or carrots for extra vegetables.
- Use cream of chicken soup as a shortcut instead of making the sauce.
