Description

A comforting cheesy chicken broccoli rice casserole made with tender chicken, fluffy rice, and broccoli baked in a creamy cheese sauce until bubbly and golden.


Ingredients

  • 2 cups cooked chicken breast, shredded or diced
  • 2 cups cooked white rice
  • 2 cups broccoli florets (fresh or frozen)
  • 2 tbsp unsalted butter
  • 1 small onion, finely chopped
  • 2 cloves garlic, minced
  • 2 tbsp all-purpose flour
  • 1 1/2 cups milk
  • 1 cup chicken broth
  • 2 cups shredded cheddar cheese, divided
  • 1/2 cup grated Parmesan cheese
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 1/2 tsp dried thyme
  • 1/2 cup breadcrumbs (optional topping)
  • 1 tbsp olive oil or melted butter (for topping)


Instructions

  1. Preheat the oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. If using fresh broccoli, blanch the florets in boiling water for 2–3 minutes, then drain well.
  3. In a large skillet, melt butter over medium heat. Add onion and cook for 3–4 minutes until softened. Stir in garlic and cook for 30 seconds.
  4. Sprinkle flour over the onion mixture and whisk for 1 minute to create a roux.
  5. Gradually whisk in the milk and chicken broth. Cook for 3–5 minutes, stirring constantly, until the sauce thickens.
  6. Add salt, pepper, paprika, and thyme. Stir in 1 1/2 cups of cheddar cheese and the Parmesan cheese until melted and smooth.
  7. In a large bowl, combine cooked chicken, rice, broccoli, and cheese sauce. Mix well.
  8. Transfer the mixture to the prepared baking dish and spread evenly.
  9. Top with the remaining 1/2 cup cheddar cheese. If using breadcrumbs, mix them with olive oil or melted butter and sprinkle on top.
  10. Bake uncovered for 25–30 minutes until hot, bubbly, and lightly golden on top.
  11. Allow the casserole to rest for 5–10 minutes before serving.
