Soft, fluffy buns filled with spicy dynamite chicken, creamy sauce, and gooey melted cheese — a perfect snack or meal inspired by Kookmutsjes’ flavorful fusion recipes.
Ingredients
- For the Dough:
- 3 cups (375g) all-purpose flour
- 2 tsp instant yeast
- 2 tbsp sugar
- 1/2 tsp salt
- 3/4 cup (180ml) warm milk
- 1/4 cup (60ml) warm water
- 1 large egg
- 2 tbsp butter, softened
- For the Dynamite Chicken Filling:
- 1 lb (450g) boneless chicken breast, cut into small cubes
- 1 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp black pepper
- 1/2 tsp chili powder (adjust to taste)
- Salt, to taste
- 2 tbsp oil (for frying)
- For the Dynamite Sauce:
- 1/2 cup mayonnaise
- 2 tbsp sweet chili sauce
- 1 tbsp sriracha (or to taste)
- 1 tsp honey (optional, for balance)
- Additional:
- 1 cup shredded mozzarella cheese
- 1 egg yolk + 1 tbsp milk (for egg wash)
- Chopped parsley or sesame seeds for garnish (optional)
Instructions
- Prepare the Dough: In a bowl, mix warm milk, water, sugar, and yeast. Let sit for 5–10 minutes until frothy. Add egg, butter, salt, and flour. Knead until a smooth, elastic dough forms (about 8–10 minutes). Cover and let rise for 1 hour or until doubled in size.
- Make the Dynamite Chicken: Season chicken pieces with paprika, garlic powder, chili powder, salt, and pepper. Heat oil in a skillet and cook chicken until golden and cooked through. Remove and let cool slightly.
- Prepare the Sauce: In a small bowl, whisk together mayonnaise, sweet chili sauce, sriracha, and honey. Combine with the cooked chicken until well coated.
- Assemble the Buns: Punch down the dough and divide into 10 equal pieces. Flatten each portion, add a spoonful of dynamite chicken and a sprinkle of mozzarella cheese, then pinch to seal and form a ball.
- Place buns seam-side down on a parchment-lined baking tray. Cover and let rise for 30 minutes.
- Brush each bun with egg wash and sprinkle with sesame seeds if desired.
- Bake at 375°F (190°C) for 18–20 minutes or until golden brown.
- Serve warm, optionally drizzled with extra dynamite sauce and topped with melted cheese or parsley.
Notes
- Adjust the spice level by adding more or less sriracha to the sauce.
- Can be made ahead — reheat in the oven for 5–7 minutes before serving.
