Ingredients

  • 2 lbs (900g) russet or Yukon gold potatoes, thinly sliced
  • 3 tbsp unsalted butter
  • 2 tbsp all-purpose flour
  • 2 cups whole milk
  • 1 cup heavy cream
  • 1 1/2 cups shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1 tbsp chopped fresh parsley (for garnish)


Instructions

  1. Preheat oven to 375°F (190°C) and grease a 9×13-inch baking dish.
  2. In a medium saucepan, melt butter over medium heat. Stir in flour and cook for 1 minute to form a roux.
  3. Gradually whisk in milk and cream, stirring constantly until the sauce thickens (about 3–5 minutes).
  4. Remove from heat and stir in garlic powder, onion powder, salt, pepper, 1 cup cheddar, and 1/4 cup Parmesan until melted and smooth.
  5. Layer half of the sliced potatoes evenly in the prepared baking dish. Pour half of the cheese sauce over the potatoes.
  6. Repeat with the remaining potatoes and sauce, ensuring all slices are coated.
  7. Top with the remaining cheddar and Parmesan cheeses.
  8. Cover with foil and bake for 40 minutes. Remove foil and bake an additional 20–25 minutes, or until the top is golden and bubbly.
  9. Let rest for 10 minutes before serving. Garnish with chopped parsley.
