Description
Cheesy ranch chicken bombs are juicy chicken bites stuffed with melty cheese, coated in ranch seasoning, and baked until golden and irresistible.
Ingredients
- 1 lb (450 g) boneless, skinless chicken breasts, cut into large chunks
- 6 oz (170 g) mozzarella cheese, cut into cubes
- 1 packet (1 oz / 28 g) ranch seasoning mix
- 1 cup seasoned breadcrumbs
- 2 large eggs
- 1/2 cup all-purpose flour
- 1 teaspoon garlic powder
- 1/2 teaspoon paprika
- Cooking spray or olive oil spray
- Ranch dressing or marinara sauce for dipping
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Cut a small pocket into each chicken piece and stuff with a cube of mozzarella cheese.
- Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with ranch seasoning, garlic powder, and paprika.
- Coat each stuffed chicken piece in flour, dip in egg, then roll in breadcrumb mixture.
- Place chicken bombs on the prepared baking sheet and lightly spray with cooking spray.
- Bake for 20–25 minutes, flipping halfway through, until golden and chicken is fully cooked.
- Let cool slightly and serve with dipping sauce.
Notes
- Seal chicken well around the cheese to prevent leaks.
- You can freeze the stuffed chicken for 15 minutes before breading for easier handling.
- Use an instant thermometer—chicken is done at 165°F (74°C).
