Description

Cheesy ranch chicken bombs are juicy chicken bites stuffed with melty cheese, coated in ranch seasoning, and baked until golden and irresistible.

Ingredients

  • 1 lb (450 g) boneless, skinless chicken breasts, cut into large chunks
  • 6 oz (170 g) mozzarella cheese, cut into cubes
  • 1 packet (1 oz / 28 g) ranch seasoning mix
  • 1 cup seasoned breadcrumbs
  • 2 large eggs
  • 1/2 cup all-purpose flour
  • 1 teaspoon garlic powder
  • 1/2 teaspoon paprika
  • Cooking spray or olive oil spray
  • Ranch dressing or marinara sauce for dipping

Instructions

  1. Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. Cut a small pocket into each chicken piece and stuff with a cube of mozzarella cheese.
  3. Set up a breading station with flour, beaten eggs, and breadcrumbs mixed with ranch seasoning, garlic powder, and paprika.
  4. Coat each stuffed chicken piece in flour, dip in egg, then roll in breadcrumb mixture.
  5. Place chicken bombs on the prepared baking sheet and lightly spray with cooking spray.
  6. Bake for 20–25 minutes, flipping halfway through, until golden and chicken is fully cooked.
  7. Let cool slightly and serve with dipping sauce.

Notes

  • Seal chicken well around the cheese to prevent leaks.
  • You can freeze the stuffed chicken for 15 minutes before breading for easier handling.
  • Use an instant thermometer—chicken is done at 165°F (74°C).
