A hearty, comforting dish featuring tender potatoes, smoked sausage, melted cheese, and creamy ranch seasoning baked to golden perfection.
Ingredients
- 2 lbs baby potatoes, quartered
- 1 lb smoked sausage, sliced
- 2 tbsp olive oil
- 1 packet (1 oz) ranch seasoning mix
- 1 cup shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup sour cream
- 1/4 cup chopped green onions (optional)
- Salt and pepper to taste
Instructions
- Preheat oven to 400Β°F (205Β°C). Lightly grease a large baking dish.
- In a large bowl, combine potatoes, olive oil, ranch seasoning, salt, and pepper. Toss to coat evenly.
- Spread the seasoned potatoes into the baking dish and bake for 25 minutes.
- Remove from the oven, add the sliced smoked sausage, and stir to combine. Return to the oven for an additional 15 minutes or until potatoes are tender.
- Sprinkle cheddar and mozzarella cheese evenly over the top. Bake for another 5β7 minutes or until cheese is melted and bubbly.
- Remove from oven and top with sour cream and green onions if desired. Serve warm.
Notes
- For extra crispiness, broil for 1β2 minutes after adding cheese.
- You can substitute turkey sausage or chicken sausage.
- Add bell peppers or onions for more flavor and color.
