Description

Cheesy Skillet Chicken & Potatoes is a hearty one-pan meal made with tender chicken, crispy potatoes, and melted cheese, perfect for a comforting and easy family dinner.


Ingredients

  • 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
  • 1 lb baby potatoes, halved
  • 2 tablespoons olive oil
  • 1 teaspoon paprika
  • 1 teaspoon garlic powder
  • 1/2 teaspoon onion powder
  • Salt and black pepper, to taste
  • 1 cup shredded cheddar or mozzarella cheese
  • 2 tablespoons chopped fresh parsley (optional)


Instructions

  1. Heat olive oil in a large skillet over medium-high heat.
  2. Add potatoes, season with salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until golden and tender.
  3. Push potatoes to one side of the skillet and add chicken pieces.
  4. Season chicken with garlic powder, onion powder, salt, and pepper.
  5. Cook chicken for 6–8 minutes until browned and fully cooked.
  6. Stir chicken and potatoes together evenly.
  7. Reduce heat to low and sprinkle cheese evenly over the skillet.
  8. Cover and cook for 2–3 minutes until cheese is melted.
  9. Garnish with fresh parsley and serve hot.
