Cheesy Skillet Chicken & Potatoes is a hearty one-pan meal made with tender chicken, crispy potatoes, and melted cheese, perfect for a comforting and easy family dinner.
Ingredients
- 1 lb boneless, skinless chicken breasts, cut into bite-sized pieces
- 1 lb baby potatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon paprika
- 1 teaspoon garlic powder
- 1/2 teaspoon onion powder
- Salt and black pepper, to taste
- 1 cup shredded cheddar or mozzarella cheese
- 2 tablespoons chopped fresh parsley (optional)
Instructions
- Heat olive oil in a large skillet over medium-high heat.
- Add potatoes, season with salt, pepper, and paprika, and cook for 12–15 minutes, stirring occasionally, until golden and tender.
- Push potatoes to one side of the skillet and add chicken pieces.
- Season chicken with garlic powder, onion powder, salt, and pepper.
- Cook chicken for 6–8 minutes until browned and fully cooked.
- Stir chicken and potatoes together evenly.
- Reduce heat to low and sprinkle cheese evenly over the skillet.
- Cover and cook for 2–3 minutes until cheese is melted.
- Garnish with fresh parsley and serve hot.
