Description

Chicken and Spinach Lasagna is a hearty and comforting baked pasta dish layered with tender chicken, creamy ricotta, sautéed spinach, rich sauce, and melted cheese.


Ingredients

  • 9 lasagna noodles
  • 2 cups cooked chicken breast, shredded
  • 2 cups fresh spinach, chopped
  • 2 cups ricotta cheese
  • 1 1/2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 1 large egg
  • 2 cloves garlic, minced
  • 1 tablespoon olive oil
  • Salt and black pepper to taste
  • 1 teaspoon Italian seasoning


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. Heat olive oil in a skillet over medium heat and sauté garlic until fragrant.
  4. Add spinach and cook until wilted; remove from heat.
  5. In a bowl, mix ricotta cheese, egg, Italian seasoning, salt, and pepper.
  6. In a baking dish, spread a thin layer of marinara sauce.
  7. Layer noodles, ricotta mixture, chicken, spinach, sauce, and mozzarella.
  8. Repeat layers and finish with mozzarella and Parmesan on top.
  9. Cover with foil and bake for 30 minutes.
  10. Remove foil and bake an additional 10–15 minutes until bubbly and golden.
  11. Let rest 10 minutes before slicing and serving.

Notes

  • Letting the lasagna rest helps it hold its shape.
  • You can use rotisserie chicken for convenience.
  • Add red pepper flakes for a spicy kick.
