Description
Chicken Mushroom Stroganoff is a creamy, comforting dish made with tender chicken pieces, sautéed mushrooms, and a rich sour cream sauce. It’s quick to prepare and perfect when served over noodles, rice, or mashed potatoes.
Ingredients
- 1 lb (450 g) chicken breast, sliced
- 2 cups mushrooms, sliced
- 1 medium onion, finely chopped
- 3 cloves garlic, minced
- 2 tablespoons butter
- 1 tablespoon olive oil
- 1 cup chicken broth
- 1 cup sour cream
- 1 tablespoon all-purpose flour
- 1 teaspoon paprika
- Salt and black pepper to taste
- 2 tablespoons chopped fresh parsley
Instructions
- Heat olive oil and butter in a large skillet over medium heat.
- Add chicken slices, season with salt and pepper, and cook until lightly browned. Remove and set aside.
- In the same skillet, add onion and mushrooms and sauté until softened and lightly golden.
- Add garlic and paprika, cooking for 30 seconds until fragrant.
- Sprinkle flour over the vegetables and stir well.
- Gradually add chicken broth, stirring constantly until the sauce thickens.
- Lower heat and stir in sour cream until smooth.
- Return chicken to the skillet and simmer for 5–7 minutes until cooked through.
- Garnish with parsley and serve hot.
Notes
- Do not boil after adding sour cream to prevent curdling.
- Can be made with chicken thighs for extra juiciness.
- Serve traditionally over egg noodles.
