Description

Chicken Mushroom Stroganoff is a creamy, comforting dish made with tender chicken pieces, sautéed mushrooms, and a rich sour cream sauce. It’s quick to prepare and perfect when served over noodles, rice, or mashed potatoes.


Ingredients

  • 1 lb (450 g) chicken breast, sliced
  • 2 cups mushrooms, sliced
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • 2 tablespoons butter
  • 1 tablespoon olive oil
  • 1 cup chicken broth
  • 1 cup sour cream
  • 1 tablespoon all-purpose flour
  • 1 teaspoon paprika
  • Salt and black pepper to taste
  • 2 tablespoons chopped fresh parsley


Instructions

  1. Heat olive oil and butter in a large skillet over medium heat.
  2. Add chicken slices, season with salt and pepper, and cook until lightly browned. Remove and set aside.
  3. In the same skillet, add onion and mushrooms and sauté until softened and lightly golden.
  4. Add garlic and paprika, cooking for 30 seconds until fragrant.
  5. Sprinkle flour over the vegetables and stir well.
  6. Gradually add chicken broth, stirring constantly until the sauce thickens.
  7. Lower heat and stir in sour cream until smooth.
  8. Return chicken to the skillet and simmer for 5–7 minutes until cooked through.
  9. Garnish with parsley and serve hot.

Notes

  • Do not boil after adding sour cream to prevent curdling.
  • Can be made with chicken thighs for extra juiciness.
  • Serve traditionally over egg noodles.
