Description

Chicken Shawarma with Garlic Sauce & Fries is a Middle Eastern street food favorite made with marinated grilled chicken, creamy garlic sauce, and crispy golden fries served in a wrap or on a plate.


Ingredients

  • 500g boneless chicken thighs
  • 3 tbsp plain yogurt
  • 3 tbsp olive oil
  • 3 cloves garlic, minced
  • 1 tsp ground cumin
  • 1 tsp ground paprika
  • 1 tsp ground coriander
  • 1/2 tsp ground turmeric
  • 1/2 tsp ground cinnamon
  • 1/2 tsp cayenne pepper
  • 1 tbsp lemon juice
  • Salt and black pepper, to taste
  • 4 pita breads or flatbreads
  • 3 medium potatoes, cut into fries
  • 2 tbsp vegetable oil
  • Chopped lettuce, tomatoes, cucumbers (for garnish)
  • For Garlic Sauce: 1/2 cup mayonnaise, 2 tbsp Greek yogurt, 2 cloves garlic (minced), 1 tbsp lemon juice, 1 tbsp olive oil, salt to taste


Instructions

  1. In a bowl, mix yogurt, olive oil, garlic, cumin, paprika, coriander, turmeric, cinnamon, cayenne, lemon juice, salt, and pepper.
  2. Add chicken thighs to the marinade, coat well, and refrigerate for at least 1 hour (overnight for best flavor).
  3. Preheat grill or skillet over medium-high heat and cook chicken until golden and fully cooked, about 6–8 minutes per side.
  4. Remove chicken, rest for 5 minutes, then slice thinly.
  5. Toss potato fries with vegetable oil, salt, and pepper. Bake or fry until golden and crispy.
  6. In a small bowl, mix mayonnaise, yogurt, garlic, lemon juice, olive oil, and salt to make garlic sauce.
  7. Warm pita breads and layer with lettuce, tomatoes, cucumbers, sliced chicken, garlic sauce, and fries.
  8. Serve wrapped or plated with extra garlic sauce on the side.

Notes

  • For a healthier version, bake the fries instead of frying.
  • You can use chicken breast, but thighs give juicier results.
  • Serve with pickles for an authentic touch.
