Description
Chocolate Mint Cookies are soft, rich chocolate cookies topped with a layer of melted mint chocolate, creating a refreshing and decadent dessert perfect for holidays or everyday treats.
Ingredients
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 1 large egg
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1/2 cup unsweetened cocoa powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 18 mint chocolate candies (such as mint chocolate wafers)
- 1/2 cup semi-sweet chocolate chips (optional for drizzle)
Instructions
- Preheat the oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a bowl, cream together the softened butter and sugar until light and fluffy.
- Add the egg and vanilla extract and mix until well combined.
- In another bowl, whisk together the flour, cocoa powder, baking soda, and salt.
- Gradually add the dry ingredients to the wet mixture and mix until a soft dough forms.
- Roll the dough into 1-inch balls and place them on the prepared baking sheet about 2 inches apart.
- Bake for 8–10 minutes until the cookies are set.
- Immediately place a mint chocolate candy on top of each hot cookie and allow it to soften.
- Spread the melted candy gently with the back of a spoon to frost the cookie.
- If desired, melt chocolate chips and drizzle over the cookies. Allow cookies to cool completely before serving.
Notes
- Use peppermint patties or Andes mints if mint wafers are unavailable.
- Chill the dough for 20 minutes if it feels too soft to handle.
- Store cookies in an airtight container for up to 4 days.
- These cookies are great for holiday cookie trays.
