Ingredients

  • 1 French baguette, sliced into 1/2-inch rounds
  • 3 tbsp olive oil (for brushing)
  • 4 ripe tomatoes, finely diced
  • 2 cloves garlic, minced
  • 1/4 cup red onion, finely diced
  • 1/4 cup fresh basil, chopped
  • 1 tbsp balsamic vinegar
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1 cup fresh mozzarella pearls (optional)
  • Balsamic glaze, for drizzling
  • Fresh rosemary sprigs (for garnish)


Instructions

  1. Preheat oven to 400°F (200°C). Arrange baguette slices on a baking sheet.
  2. Brush each slice lightly with olive oil.
  3. Toast for 8–10 minutes or until golden and crisp. Let cool.
  4. In a mixing bowl, combine diced tomatoes, garlic, red onion, basil, balsamic vinegar, salt, and pepper. Toss gently to mix.
  5. Arrange toasted baguette slices in a circular wreath pattern on a serving board or platter.
  6. Spoon the tomato mixture evenly over each slice.
  7. Add mozzarella pearls if using.
  8. Drizzle lightly with balsamic glaze.
  9. Garnish the wreath with fresh rosemary sprigs to create a festive look.
  10. Serve immediately.

Notes

  • For extra flavor, rub toasted baguette slices with a cut garlic clove.
  • Cherry tomatoes can be used instead of large tomatoes.
