- Crust:
- 1 1/2 cups graham cracker crumbs or crushed cinnamon cookies
- 6 tbsp melted butter
- 2 tbsp sugar

- 1/4 cup butter, melted
- 1/3 cup brown sugar
- 1 tbsp cinnamon

- Cheesecake Filling:
- 24 oz cream cheese, softened
- 1 cup sugar
- 3 large eggs
- 1 cup sour cream
- 1 tbsp vanilla extract
- Glaze (optional):
- 1/2 cup powdered sugar
- 1–2 tbsp milk
Instructions
- Preheat oven to 325°F (160°C). Grease a 9-inch springform pan.
- Combine crust ingredients and press firmly into the pan. Bake for 8 minutes and cool.
- Mix melted butter, brown sugar, and cinnamon for the swirl; set aside.
- Beat cream cheese and sugar until smooth.
- Add eggs one at a time, mixing gently. Then add sour cream and vanilla.
- Pour half the cheesecake batter over the crust.
- Drizzle half the cinnamon swirl mixture over the batter and swirl with a knife.
- Pour the remaining batter on top, then swirl in remaining cinnamon mixture.
- Bake 55–70 minutes, or until center is set but slightly jiggly.
- Cool completely, then chill at least 4 hours.
- Drizzle glaze over the top before serving.
Notes
- Use a water bath to prevent cracking and create a smoother texture.
- Add a cream cheese frosting drizzle instead of powdered sugar glaze for extra richness.
- Tastes even better the next day after chilling.
