Description

Cowboy Butter Chicken Linguine is a rich, savory pasta dish featuring tender seasoned chicken tossed in a zesty cowboy butter sauce made with garlic, herbs, lemon, and a touch of heat.


Ingredients

  • 12 oz linguine
  • 1 lb chicken breast, sliced into strips
  • 1 tbsp olive oil
  • 1 tsp paprika
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • Salt and pepper, to taste
  • 6 tbsp butter
  • 4 garlic cloves, minced
  • 1 tbsp Dijon mustard
  • 1 tbsp lemon juice
  • 1/4 tsp cayenne pepper (optional)
  • 1/2 tsp crushed red pepper flakes
  • 1 tbsp chopped fresh parsley
  • 1 tbsp chopped chives
  • 1/4 cup pasta water (reserved)
  • Fresh Parmesan for serving (optional)


Instructions

  1. Cook linguine in salted boiling water according to package instructions. Reserve pasta water and drain.
  2. Season chicken with paprika, garlic powder, onion powder, salt, and pepper.
  3. Heat olive oil in a skillet over medium-high heat and cook chicken until golden and fully cooked, 6–7 minutes. Remove and set aside.
  4. In the same skillet, melt butter and add garlic. Sauté until fragrant, about 1 minute.
  5. Stir in Dijon mustard, lemon juice, cayenne, red pepper flakes, parsley, and chives.
  6. Return chicken to the skillet and toss to coat in the cowboy butter sauce.
  7. Add linguine and a splash of reserved pasta water, tossing until everything is well combined and glossy.
  8. Serve warm with freshly grated Parmesan if desired.

Notes

  • Adjust spice level by adding more or less cayenne and crushed red pepper.
  • Great with shrimp instead of chicken for a seafood variation.
  • Add spinach or cherry tomatoes for extra color and nutrients.
