Ingredients
- 1 lb pizza dough
- 1 whole head garlic
- 1 tbsp olive oil
- 1 cup ricotta cheese
- 1 1/2 cups shredded mozzarella cheese
- 1/2 cup crumbled feta cheese
- 2 cups fresh spinach
- 1/2 tsp dried oregano
- 1/4 tsp red pepper flakes (optional)
- Salt and black pepper to taste
Instructions
- Preheat oven to 425°F (220°C).
- Cut the top off the garlic head, drizzle with olive oil, wrap in foil, and roast for 30-35 minutes until soft. Cool and squeeze out roasted garlic cloves.
- Roll out pizza dough onto a baking sheet or pizza stone.
- Spread ricotta evenly over the dough.
- Mash roasted garlic and distribute over ricotta layer.
- Top with mozzarella, feta, and fresh spinach.
- Sprinkle oregano, red pepper flakes, salt, and pepper.
- Bake for 12-15 minutes until crust is golden and cheese is bubbly.
- Slice and serve warm.
Notes
- Pre-bake crust for 5 minutes if you prefer a crispier base.
- Add kalamata olives for extra Greek flavor.
- Use whole milk ricotta for creamier texture.
