Description
Elegant yet easy, this cranberry Brie stuffed chicken combines juicy chicken breasts with creamy melted Brie and tangy cranberry sauce — perfect for holiday dinners or special occasions.
Ingredients
- 4 boneless, skinless chicken breasts
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/2 tsp garlic powder
- 1/2 tsp dried thyme (or rosemary)
- 4 oz (115g) Brie cheese, sliced
- 1/2 cup (120ml) cranberry sauce (homemade or store-bought)
- 2 tbsp olive oil
- 2 tbsp butter
- 1/4 cup (60ml) chicken broth
- 1 tbsp balsamic vinegar (optional, for extra flavor)
- Fresh rosemary or thyme sprigs, for garnish
Instructions
- Preheat oven to 375°F (190°C).
- Cut a pocket in the side of each chicken breast, being careful not to slice all the way through.
- Season chicken inside and out with salt, pepper, garlic powder, and thyme.
- Stuff each chicken breast with a few slices of Brie and a spoonful of cranberry sauce. Secure with toothpicks if necessary.
- In a large oven-safe skillet, heat olive oil and butter over medium heat. Sear chicken breasts for 2–3 minutes per side until golden brown.
- Add chicken broth and balsamic vinegar to the pan, then transfer the skillet to the oven.
- Bake for 18–22 minutes, or until chicken is cooked through (internal temperature 165°F / 74°C).
- Let rest for 5 minutes before serving. Spoon pan juices over the top and garnish with fresh herbs.
Notes
- Use thick chicken breasts for easier stuffing and better presentation.
- Substitute Brie with Camembert or goat cheese for a different flavor.
- Pairs beautifully with roasted vegetables, mashed potatoes, or a holiday salad.
