Description

Elegant yet easy, this cranberry Brie stuffed chicken combines juicy chicken breasts with creamy melted Brie and tangy cranberry sauce — perfect for holiday dinners or special occasions.


Ingredients

  • 4 boneless, skinless chicken breasts
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 tsp garlic powder
  • 1/2 tsp dried thyme (or rosemary)
  • 4 oz (115g) Brie cheese, sliced
  • 1/2 cup (120ml) cranberry sauce (homemade or store-bought)
  • 2 tbsp olive oil
  • 2 tbsp butter
  • 1/4 cup (60ml) chicken broth
  • 1 tbsp balsamic vinegar (optional, for extra flavor)
  • Fresh rosemary or thyme sprigs, for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut a pocket in the side of each chicken breast, being careful not to slice all the way through.
  3. Season chicken inside and out with salt, pepper, garlic powder, and thyme.
  4. Stuff each chicken breast with a few slices of Brie and a spoonful of cranberry sauce. Secure with toothpicks if necessary.
  5. In a large oven-safe skillet, heat olive oil and butter over medium heat. Sear chicken breasts for 2–3 minutes per side until golden brown.
  6. Add chicken broth and balsamic vinegar to the pan, then transfer the skillet to the oven.
  7. Bake for 18–22 minutes, or until chicken is cooked through (internal temperature 165°F / 74°C).
  8. Let rest for 5 minutes before serving. Spoon pan juices over the top and garnish with fresh herbs.

  • Substitute Brie with Camembert or goat cheese for a different flavor.
