Ingredients
- 12 oz (340g) fettuccine pasta
- 2 tbsp olive oil
- 1 lb (450g) boneless, skinless chicken breasts, sliced thinly
- 2 tbsp unsalted butter
- 3 cloves garlic, minced
- 1 1/2 cups heavy cream
- 1 cup freshly grated Parmesan cheese
- 1/2 tsp salt
- 1/4 tsp black pepper
- 1/4 tsp nutmeg (optional)
- 2 tbsp chopped parsley (for garnish)
Instructions
- Bring a large pot of salted water to a boil and cook the fettuccine according to package directions until al dente. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add chicken slices, season with salt and pepper, and cook for 5–7 minutes until golden and cooked through. Remove and set aside.
- In the same skillet, melt butter over medium heat. Add minced garlic and cook for 1 minute until fragrant.
- Pour in heavy cream and bring to a gentle simmer. Reduce heat and whisk for 2–3 minutes until slightly thickened.
- Stir in Parmesan cheese gradually until melted and smooth. Season with salt, pepper, and nutmeg if using.
- Add cooked fettuccine and chicken to the sauce. Toss until evenly coated and heated through.
- Garnish with chopped parsley and extra Parmesan before serving.
