Creamy Jalapeño Popper Casserole is a rich, cheesy, and slightly spicy dish inspired by classic jalapeño poppers—loaded with chicken, cream cheese, jalapeños, and topped with crispy bacon and melted cheese.
Ingredients
- 3 cups cooked shredded chicken
- 8 oz cream cheese, softened
- 1 cup sour cream
- 1 1/2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 4–5 jalapeños, seeded and diced (leave seeds for extra heat)
- 6 slices cooked bacon, crumbled
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/3 cup green onions, chopped (optional)
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a large bowl, mix cream cheese, sour cream, garlic powder, onion powder, salt, and pepper until smooth.
- Stir in shredded chicken, diced jalapeños, 1 cup cheddar, and 1/2 cup mozzarella.
- Spread mixture evenly into the baking dish.
- Top with remaining cheddar and mozzarella cheese.
- Sprinkle crumbled bacon over the top.
- Bake for 20–25 minutes, or until bubbly and golden.
- Garnish with green onions and serve warm.
Notes
- Add cooked pasta or cooked rice to make it a heartier main dish.
- Use canned diced jalapeños for milder flavor.
- Top with crushed Ritz or pork rinds for a crunchy finish.
