Description

Creamy Jalapeño Popper Casserole is a rich, cheesy, and slightly spicy dish inspired by classic jalapeño poppers—loaded with chicken, cream cheese, jalapeños, and topped with crispy bacon and melted cheese.

Ingredients

  • 3 cups cooked shredded chicken
  • 8 oz cream cheese, softened
  • 1 cup sour cream
  • 1 1/2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 45 jalapeños, seeded and diced (leave seeds for extra heat)
  • 6 slices cooked bacon, crumbled
  • 1 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/3 cup green onions, chopped (optional)

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a large bowl, mix cream cheese, sour cream, garlic powder, onion powder, salt, and pepper until smooth.
  3. Stir in shredded chicken, diced jalapeños, 1 cup cheddar, and 1/2 cup mozzarella.
  4. Spread mixture evenly into the baking dish.
  5. Top with remaining cheddar and mozzarella cheese.
  6. Sprinkle crumbled bacon over the top.
  7. Bake for 20–25 minutes, or until bubbly and golden.
  8. Garnish with green onions and serve warm.

Notes

  • Add cooked pasta or cooked rice to make it a heartier main dish.
  • Use canned diced jalapeños for milder flavor.
  • Top with crushed Ritz or pork rinds for a crunchy finish.
