Ingredients
- 1 large head cauliflower, cut into florets
- 3 tbsp olive oil
- 2 tbsp cornstarch or arrowroot powder
- 1 tsp garlic powder
- 1 tsp smoked paprika
- 1/2 tsp cumin
- 1/2 tsp chili powder (optional for spice)
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 tbsp grated Parmesan cheese or nutritional yeast (optional)
- Fresh parsley or cilantro, chopped (for garnish)
Instructions
- Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
- Wash and dry the cauliflower thoroughly. Cut into evenly sized florets for even roasting.
- In a large bowl, whisk together olive oil, cornstarch, garlic powder, smoked paprika, cumin, chili powder, salt, and pepper.
- Add cauliflower florets to the bowl and toss until well coated.
- Spread the cauliflower in a single layer on the prepared baking sheet, making sure the pieces don’t overlap.
- Bake for 25–30 minutes, flipping halfway through, until crispy and golden brown on the edges.
- Sprinkle with Parmesan cheese or nutritional yeast (if using) and bake for an additional 5 minutes.
- Remove from oven, garnish with fresh herbs, and serve immediately.

- For extra crispiness, avoid crowding the pan — use two trays if necessary.
- Air-fry at 400°F (200°C) for 15–18 minutes for a faster version.
- Add a squeeze of lemon juice or a drizzle of tahini sauce before serving for a flavor boost.
