This crispy roasted cauliflower is so flavorful and satisfying that it rivals meat! Seasoned to perfection and baked until golden and crunchy, it’s a healthy, plant-based dish that’s simple to make and irresistibly delicious.


Ingredients

  • 1 large head cauliflower, cut into florets
  • 3 tbsp olive oil
  • 2 tbsp cornstarch or arrowroot powder
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • 1/2 tsp cumin
  • 1/2 tsp chili powder (optional for spice)
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 2 tbsp grated Parmesan cheese or nutritional yeast (optional)
  • Fresh parsley or cilantro, chopped (for garnish)


Instructions

  1. Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  2. Wash and dry the cauliflower thoroughly. Cut into evenly sized florets for even roasting.
  3. In a large bowl, whisk together olive oil, cornstarch, garlic powder, smoked paprika, cumin, chili powder, salt, and pepper.
  4. Add cauliflower florets to the bowl and toss until well coated.
  5. Spread the cauliflower in a single layer on the prepared baking sheet, making sure the pieces don’t overlap.
  6. Bake for 25–30 minutes, flipping halfway through, until crispy and golden brown on the edges.
  7. Sprinkle with Parmesan cheese or nutritional yeast (if using) and bake for an additional 5 minutes.
  8. Remove from oven, garnish with fresh herbs, and serve immediately.

  • For extra crispiness, avoid crowding the pan — use two trays if necessary.
  • Air-fry at 400°F (200°C) for 15–18 minutes for a faster version.
