Easy Chicken & Stuffing Casserole is a cozy, comforting dish made with tender chicken, creamy soup, and savory stuffing. It’s a simple one-pan meal that’s perfect for busy weeknights or when you want a hearty, home-cooked dinner with minimal effort.
Ingredients
- 3 cups cooked shredded chicken (rotisserie or boiled)
- 1 (10.5 oz) can cream of chicken soup
- 1 (10.5 oz) can cream of mushroom soup (or use 2 cans cream of chicken if preferred)
- 3/4 cup sour cream
- 1/2 cup chicken broth
- 1/2 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp black pepper
- 1 (6 oz) box Stove Top stuffing mix (chicken flavor)
- 1/2 cup unsalted butter, melted
- 1 1/4 cups hot water
- Optional garnish: chopped parsley
Instructions
- Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
- In a large bowl, combine cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, and black pepper. Stir until well blended.
- Add the shredded chicken to the mixture and stir to coat evenly. Spread this mixture evenly in the prepared baking dish.
- In a separate bowl, combine the stuffing mix, melted butter, and hot water. Stir gently until the stuffing is moistened but still fluffy.
- Spoon the stuffing mixture evenly over the chicken layer.
- Bake uncovered for 30–35 minutes, or until the casserole is hot and bubbling and the stuffing is golden brown on top.
- Remove from oven and let rest for 5 minutes before serving. Garnish with parsley if desired.
Notes
- For added flavor, mix in 1 cup of cooked vegetables such as peas, carrots, or green beans.
- Make ahead by assembling the casserole and refrigerating it for up to 24 hours before baking.
- Use leftover turkey instead of chicken for a post-holiday variation.
