Description

Easy Chicken & Stuffing Casserole is a cozy, comforting dish made with tender chicken, creamy soup, and savory stuffing. It’s a simple one-pan meal that’s perfect for busy weeknights or when you want a hearty, home-cooked dinner with minimal effort.


Ingredients

  • 3 cups cooked shredded chicken (rotisserie or boiled)
  • 1 (10.5 oz) can cream of chicken soup
  • 1 (10.5 oz) can cream of mushroom soup (or use 2 cans cream of chicken if preferred)
  • 3/4 cup sour cream
  • 1/2 cup chicken broth
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/2 tsp black pepper
  • 1 (6 oz) box Stove Top stuffing mix (chicken flavor)
  • 1/2 cup unsalted butter, melted
  • 1 1/4 cups hot water
  • Optional garnish: chopped parsley


Instructions

  1. Preheat oven to 375°F (190°C). Lightly grease a 9×13-inch baking dish.
  2. In a large bowl, combine cream of chicken soup, cream of mushroom soup, sour cream, chicken broth, garlic powder, onion powder, and black pepper. Stir until well blended.
  3. Add the shredded chicken to the mixture and stir to coat evenly. Spread this mixture evenly in the prepared baking dish.
  4. In a separate bowl, combine the stuffing mix, melted butter, and hot water. Stir gently until the stuffing is moistened but still fluffy.
  5. Spoon the stuffing mixture evenly over the chicken layer.
  6. Bake uncovered for 30–35 minutes, or until the casserole is hot and bubbling and the stuffing is golden brown on top.
  7. Remove from oven and let rest for 5 minutes before serving. Garnish with parsley if desired.

Notes

  • For added flavor, mix in 1 cup of cooked vegetables such as peas, carrots, or green beans.
  • Make ahead by assembling the casserole and refrigerating it for up to 24 hours before baking.
