Ingredients

  • 1 1/2 cups gluten free all-purpose flour blend
  • 1 tsp baking powder
  • 1/4 tsp salt
  • 3 large eggs
  • 3/4 cup granulated sugar
  • 1/4 cup milk
  • 1/4 cup vegetable oil
  • 1 tsp vanilla extract
  • 1/2 cup strong brewed coffee, cooled
  • 8 oz mascarpone cheese
  • 1 cup heavy whipping cream
  • 1/2 cup powdered sugar
  • 1 tbsp cocoa powder (for dusting)


Instructions

  1. Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
  2. In a bowl, whisk together gluten free flour, baking powder, and salt.
  3. In another bowl, beat eggs and sugar until pale and fluffy.
  4. Mix in milk, oil, and vanilla extract.
  5. Gradually fold dry ingredients into wet mixture until smooth.
  6. Divide batter evenly between pans and bake for 20-25 minutes until a toothpick comes out clean.
  7. Cool cakes completely, then brush each layer with brewed coffee.
  8. Whip mascarpone, heavy cream, and powdered sugar until thick and creamy.
  9. Spread mascarpone mixture between layers and over the top.
  10. Dust generously with cocoa powder before serving. Chill for at least 1 hour.
