Description
An easy gluten free tiramisu cake featuring soft coffee-infused sponge layers and a creamy mascarpone filling, finished with a dusting of cocoa powder. A classic Italian-inspired dessert made gluten free without sacrificing flavor.
Ingredients
- 1 1/2 cups gluten free all-purpose flour blend
- 1 tsp baking powder
- 1/4 tsp salt
- 3 large eggs
- 3/4 cup granulated sugar
- 1/4 cup milk
- 1/4 cup vegetable oil
- 1 tsp vanilla extract
- 1/2 cup strong brewed coffee, cooled
- 8 oz mascarpone cheese
- 1 cup heavy whipping cream
- 1/2 cup powdered sugar
- 1 tbsp cocoa powder (for dusting)
Instructions
- Preheat oven to 350°F (175°C). Grease and line two 8-inch round cake pans.
- In a bowl, whisk together gluten free flour, baking powder, and salt.
- In another bowl, beat eggs and sugar until pale and fluffy.
- Mix in milk, oil, and vanilla extract.
- Gradually fold dry ingredients into wet mixture until smooth.
- Divide batter evenly between pans and bake for 20-25 minutes until a toothpick comes out clean.
- Cool cakes completely, then brush each layer with brewed coffee.
- Whip mascarpone, heavy cream, and powdered sugar until thick and creamy.
- Spread mascarpone mixture between layers and over the top.
- Dust generously with cocoa powder before serving. Chill for at least 1 hour.

- Use a certified gluten free flour blend for best results.
- Ensure coffee is fully cooled before brushing onto cake layers.
- Refrigerate leftovers for up to 3 days.
- For extra flavor, add a splash of coffee liqueur to the coffee mixture.
