Ingredients

  • 1/2 cup (115g) unsalted butter
  • 2 cups (480ml) heavy cream
  • 2 cloves garlic, minced
  • 2 cups (200g) freshly grated Parmesan cheese
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1/4 teaspoon nutmeg (optional)
  • 12 oz (340g) fettuccine pasta
  • 2 tablespoons chopped parsley (optional for garnish)


Instructions

  1. Cook the fettuccine pasta according to package instructions until al dente. Drain and set aside.
  2. In a large saucepan over medium heat, melt the butter.
  3. Add the minced garlic and sauté for about 1 minute until fragrant.
  4. Pour in the heavy cream and bring to a gentle simmer, stirring frequently.
  5. Reduce heat to low and gradually whisk in the Parmesan cheese until fully melted and smooth.
  6. Add salt, black pepper, and nutmeg (if using). Stir well.
  7. Let the sauce thicken for 3–5 minutes while stirring continuously.
  8. Add the cooked pasta to the sauce and toss until evenly coated.
  9. Serve immediately, garnished with chopped parsley if desired.

Notes

  • Use freshly grated Parmesan for best flavor and smooth texture.
  • Do not boil the sauce after adding cheese to prevent separation.
  • You can add grilled chicken or shrimp for extra protein.
