Ingredients

  • 1 lb (450 g) breakfast sausage
  • 2 cups (250 g) all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup (120 g) shredded cheddar cheese
  • 1/2 cup (120 ml) milk
  • 2 large eggs
  • 1/4 cup (60 ml) vegetable oil or melted butter


Instructions

  1. Preheat the oven to 375°F (190°C) and grease a muffin tin or line with paper liners.
  2. Cook the sausage in a skillet over medium heat until browned and fully cooked. Drain excess grease and let cool slightly.
  3. In a large bowl, whisk together flour, baking powder, salt, and black pepper.
  4. Stir in the cooked sausage and shredded cheese.
  5. In a separate bowl, whisk milk, eggs, and oil until combined.
  6. Add the wet ingredients to the dry ingredients and mix just until combined.
  7. Divide the batter evenly among muffin cups.
  8. Bake for 18–22 minutes until golden and a toothpick inserted comes out clean.
  9. Cool slightly before serving.
