Ingredients

  • 3-4 lb chuck roast
  • 1 tbsp olive oil
  • 2 medium onions, sliced
  • 1 can (10.5 oz) French onion soup
  • 1 cup beef broth
  • 1/2 cup red wine (optional)
  • 2 cloves garlic, minced
  • 1 tsp dried thyme
  • 1 tsp dried rosemary
  • Salt and pepper to taste
  • 1 tbsp Worcestershire sauce
  • 1 tbsp flour (optional, for thickening)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 325°F (165°C).
  2. In a large oven-safe pot or Dutch oven, heat the olive oil over medium-high heat. Season the chuck roast with salt and pepper, then sear it on all sides until browned, about 4-5 minutes per side. Remove the roast from the pot and set it aside.
  3. In the same pot, add the sliced onions and cook for 5-6 minutes, until softened and beginning to caramelize.
  4. Add the minced garlic and cook for another 1 minute, stirring constantly.
  5. Pour in the French onion soup, beef broth, and red wine (if using), and stir in the Worcestershire sauce, thyme, and rosemary. Bring the mixture to a simmer.
  6. Return the roast to the pot, covering it with the onion mixture. Cover the pot with a lid and transfer it to the oven. Roast for 3-4 hours, or until the meat is fork-tender and easily shreds.
  7. If you prefer a thicker sauce, remove the roast from the pot and place it on a cutting board. Stir in 1 tablespoon of flour into the sauce, and simmer for a few minutes until it thickens.
  8. Serve the pot roast with the sauce and onions, garnished with fresh parsley if desired.
