Ingredients
- 12 oz (340g) elbow macaroni or cavatappi pasta
- 3 tbsp unsalted butter
- 2 large onions, thinly sliced
- 1 tbsp olive oil
- 1 tsp sugar
- 1 tsp salt (divided)
- 1/4 cup all-purpose flour
- 3 cups beef broth (or chicken broth)
- 1 cup whole milk or heavy cream
- 2 cups shredded Gruyère cheese
- 1 cup shredded mozzarella cheese
- 1/2 cup grated Parmesan cheese
- 1/2 tsp black pepper
- 1 tsp fresh thyme leaves (or 1/2 tsp dried thyme)
- 1/2 cup breadcrumbs (optional for topping)
Instructions
- Cook pasta according to package directions until al dente. Drain and set aside.
- In a large skillet over medium heat, melt butter with olive oil. Add sliced onions, 1/2 tsp salt, and sugar. Cook slowly for 25–30 minutes, stirring often, until onions are deeply caramelized and golden brown.
- Sprinkle flour over the onions and stir for 1 minute to form a roux.
- Gradually whisk in beef broth and bring to a gentle simmer until thickened, about 3–5 minutes.
- Reduce heat to low, stir in milk or cream, and add thyme, pepper, and remaining salt.
- Remove from heat and stir in Gruyère, mozzarella, and Parmesan until melted and creamy.
- Add cooked pasta to the sauce and toss until well coated.
- Transfer to a greased 9×13-inch baking dish (if baking). Sprinkle breadcrumbs and extra cheese on top if desired.
- Bake at 375°F (190°C) for 15–20 minutes until bubbly and golden on top.
- Garnish with fresh thyme and serve warm.
