Description

This Garlic Parmesan Meatloaf is a juicy, flavorful twist on the classic recipe, packed with garlic, Italian herbs, and plenty of Parmesan cheese—perfect for a comforting family dinner.


Ingredients

  • 1 1/2 lbs ground beef (or a mix of beef and pork)
  • 1 cup breadcrumbs
  • 1/2 cup grated Parmesan cheese
  • 1/3 cup milk
  • 2 large eggs
  • 4 garlic cloves, minced
  • 1 small onion, finely diced
  • 1 tsp Italian seasoning
  • 1/2 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped parsley
  • Glaze:
  • 1/4 cup ketchup
  • 2 tbsp Parmesan cheese
  • 1 tsp garlic powder


Instructions

  1. Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
  2. In a bowl, mix breadcrumbs and milk; let sit for 2 minutes to soften.
  3. Add ground beef, eggs, minced garlic, onion, Parmesan, Italian seasoning, salt, pepper, and parsley. Mix gently until combined—do not overmix.
  4. Shape into a loaf on the baking sheet or place into a loaf pan.
  5. Stir together ketchup, Parmesan, and garlic powder to make the glaze. Spread evenly over the top of the loaf.
  6. Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
  7. Let rest for 10 minutes before slicing.

Notes

  • Mixing beef and pork makes the meatloaf extra tender.
  • Add mozzarella cubes inside the loaf for a cheesy center.
  • Leftovers make great sandwiches the next day.
