This Garlic Parmesan Meatloaf is a juicy, flavorful twist on the classic recipe, packed with garlic, Italian herbs, and plenty of Parmesan cheese—perfect for a comforting family dinner.
Ingredients
- 1 1/2 lbs ground beef (or a mix of beef and pork)
- 1 cup breadcrumbs
- 1/2 cup grated Parmesan cheese
- 1/3 cup milk
- 2 large eggs
- 4 garlic cloves, minced
- 1 small onion, finely diced
- 1 tsp Italian seasoning
- 1/2 tsp salt
- 1/2 tsp black pepper
- 1/4 cup chopped parsley
- Glaze:
- 1/4 cup ketchup
- 2 tbsp Parmesan cheese
- 1 tsp garlic powder
Instructions
- Preheat oven to 375°F (190°C). Line a baking sheet or loaf pan with parchment paper.
- In a bowl, mix breadcrumbs and milk; let sit for 2 minutes to soften.
- Add ground beef, eggs, minced garlic, onion, Parmesan, Italian seasoning, salt, pepper, and parsley. Mix gently until combined—do not overmix.
- Shape into a loaf on the baking sheet or place into a loaf pan.
- Stir together ketchup, Parmesan, and garlic powder to make the glaze. Spread evenly over the top of the loaf.
- Bake for 50–60 minutes, or until the internal temperature reaches 160°F (71°C).
- Let rest for 10 minutes before slicing.
Notes
- Mixing beef and pork makes the meatloaf extra tender.
- Add mozzarella cubes inside the loaf for a cheesy center.
- Leftovers make great sandwiches the next day.
