Ingredients

  • 1 1/4 cups all-purpose flour
  • 1 tablespoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 teaspoon ground ginger
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/4 teaspoon ground cloves
  • 2 tablespoons brown sugar
  • 1 large egg
  • 1 cup milk
  • 2 tablespoons molasses
  • 2 tablespoons melted butter
  • 1 teaspoon vanilla extract


Instructions

  1. In a large bowl, whisk together the flour, baking powder, baking soda, salt, ginger, cinnamon, nutmeg, and cloves.
  2. Stir in the brown sugar until evenly combined.
  3. In a separate bowl, whisk the egg, milk, molasses, melted butter, and vanilla.
  4. Pour the wet ingredients into the dry ingredients and mix until just combined; do not overmix.
  5. Heat a lightly greased skillet or griddle over medium heat.
  6. Pour 1/4 cup batter for each pancake and cook until bubbles form on the surface, then flip and cook until golden brown.
  7. Serve warm with maple syrup, whipped cream, or powdered sugar.

Notes

  • Do not overmix the batter or the pancakes will be dense.
