Description

Soft and fluffy gluten-free cinnamon rolls swirled with sweet cinnamon sugar and topped with a smooth vanilla glaze, perfect for breakfast or dessert.


Ingredients

  • 2 1/2 cups gluten-free all-purpose flour (with xanthan gum)
  • 2 1/4 teaspoons instant yeast
  • 1/4 cup granulated sugar
  • 1/2 teaspoon salt
  • 3/4 cup warm milk
  • 1/4 cup unsalted butter, melted
  • 1 large egg
  • 1 teaspoon vanilla extract
  • 1/3 cup brown sugar
  • 2 teaspoons ground cinnamon
  • 3 tablespoons unsalted butter, softened (for filling)
  • 1 cup powdered sugar
  • 2 tablespoons milk (for glaze)
  • 1/2 teaspoon vanilla extract (for glaze)


Instructions

  1. In a large bowl, mix gluten-free flour, yeast, sugar, and salt.
  2. Add warm milk, melted butter, egg, and vanilla extract; mix until a soft dough forms.
  3. Cover and let the dough rest for 10 minutes.
  4. Roll the dough between two sheets of parchment paper into a rectangle.
  5. Spread softened butter over the dough.
  6. Mix brown sugar and cinnamon, then sprinkle evenly over the buttered dough.
  7. Carefully roll the dough into a log and slice into 8 rolls.
  8. Place rolls into a greased baking dish and cover loosely.
  9. Let rise in a warm place for 30 minutes.
  10. Preheat oven to 350°F (175°C).
  11. Bake for 25–30 minutes until lightly golden.
  12. Whisk powdered sugar, milk, and vanilla to make the glaze.
  13. Drizzle glaze over warm cinnamon rolls before serving.

Notes

  • Do not add extra flour; gluten-free dough is softer than regular dough.
  • Use parchment paper to make rolling easier.
  • Best enjoyed fresh but can be reheated gently.
