Good Old-Fashioned Pancakes are light, fluffy, and perfectly golden — made from simple pantry staples for a classic breakfast treat that never goes out of style.
Ingredients
- 1 1/2 cups all-purpose flour
- 3 1/2 tsp baking powder
- 1 tsp salt
- 1 tbsp granulated sugar
- 1 1/4 cups milk
- 1 egg
- 3 tbsp unsalted butter, melted
- 1 tsp vanilla extract (optional)
Instructions
- In a large bowl, whisk together flour, baking powder, salt, and sugar.
- In another bowl, whisk together milk, egg, melted butter, and vanilla extract if using.
- Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix — a few lumps are fine.
- Heat a lightly oiled griddle or skillet over medium-high heat.
- Pour 1/4 cup of batter for each pancake onto the griddle.
- Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden brown.
- Serve warm with butter, maple syrup, or your favorite toppings.
Notes
- Do not overmix the batter — this keeps pancakes fluffy.
- For extra flavor, add a pinch of cinnamon or a splash of vanilla extract.
- You can substitute buttermilk for milk for a tangier, richer flavor (reduce baking powder to 2 tsp and add 1/2 tsp baking soda).
- Keep cooked pancakes warm in a 200°F (95°C) oven while finishing the batch.
