Ingredients

  • 1 1/2 cups all-purpose flour
  • 3 1/2 tsp baking powder
  • 1 tsp salt
  • 1 tbsp granulated sugar
  • 1 1/4 cups milk
  • 1 egg
  • 3 tbsp unsalted butter, melted
  • 1 tsp vanilla extract (optional)


Instructions

  1. In a large bowl, whisk together flour, baking powder, salt, and sugar.
  2. In another bowl, whisk together milk, egg, melted butter, and vanilla extract if using.
  3. Pour the wet ingredients into the dry ingredients and stir gently until just combined. Do not overmix — a few lumps are fine.
  4. Heat a lightly oiled griddle or skillet over medium-high heat.
  5. Pour 1/4 cup of batter for each pancake onto the griddle.
  6. Cook until bubbles form on the surface and edges look set, about 2–3 minutes. Flip and cook for another 1–2 minutes until golden brown.
  7. Serve warm with butter, maple syrup, or your favorite toppings.

Notes

  • Do not overmix the batter — this keeps pancakes fluffy.
  • For extra flavor, add a pinch of cinnamon or a splash of vanilla extract.
  • You can substitute buttermilk for milk for a tangier, richer flavor (reduce baking powder to 2 tsp and add 1/2 tsp baking soda).
