Description
Gorgeous Stuffed Portobello Mushroom Burgers are hearty, meatless burgers made with large portobello mushrooms stuffed with cheese, vegetables, and herbs, then grilled or baked to juicy perfection.
Ingredients
- 4 large portobello mushroom caps, stems removed
- 2 tablespoons olive oil
- 2 cloves garlic, minced
- 1/2 cup spinach, finely chopped
- 1/2 cup roasted red peppers, chopped
- 1/2 cup shredded mozzarella or provolone cheese
- 1/4 cup cream cheese, softened
- 1/4 teaspoon dried oregano
- Salt and black pepper, to taste
- 4 burger buns
- Optional toppings: lettuce, tomato, pesto, balsamic glaze
Instructions
- Preheat the oven to 400°F (200°C) or preheat a grill to medium heat.
- Brush portobello mushroom caps on both sides with olive oil and season with salt and pepper.
- In a bowl, mix garlic, spinach, roasted red peppers, mozzarella cheese, cream cheese, and oregano until combined.
- Spoon the stuffing mixture evenly into each mushroom cap.
- Place mushrooms on a baking sheet or grill-safe tray.
- Bake for 18–22 minutes (or grill covered for 15–18 minutes) until mushrooms are tender and filling is melted.
- Toast burger buns lightly if desired.
- Assemble burgers by placing stuffed mushrooms on buns and adding optional toppings.
- Serve warm.
Notes
- Do not wash mushrooms under running water; wipe clean with a damp cloth.
- Use goat cheese or feta for a different flavor profile.
- These burgers are best enjoyed immediately.
