Description

Ingredients

  • 1 lb boneless, skinless chicken breasts or thighs
  • 3 tbsp olive oil
  • 3 tbsp fresh lemon juice
  • 2 cloves garlic, minced
  • 1 tsp dried oregano
  • 1/2 tsp paprika
  • 1/2 tsp ground cumin
  • Salt and black pepper, to taste
  • 4 pita breads or flatbreads
  • 1 cup cherry tomatoes, halved
  • 1 cucumber, diced
  • 1/4 red onion, thinly sliced
  • 1/2 cup crumbled feta cheese
  • 1/2 cup tzatziki sauce
  • Fresh dill or parsley, chopped (for garnish)


Instructions

  1. In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper to create the marinade.
  2. Add chicken and coat well. Cover and refrigerate for at least 1 hour (or up to 6 hours for deeper flavor).
  3. Preheat grill or skillet over medium-high heat. Cook chicken 5–7 minutes per side, until golden and fully cooked.
  4. Let chicken rest for 5 minutes, then slice thinly.
  5. Warm pita breads in a dry skillet or oven until soft and pliable.
  6. Assemble gyros: add sliced chicken to pita, then top with tomatoes, cucumber, onion, feta, and a generous drizzle of tzatziki sauce.
  7. Garnish with fresh dill or parsley and an extra squeeze of lemon before serving.
