Ingredients
- 1 lb boneless, skinless chicken breasts or thighs

- 1/2 tsp ground cumin
- Salt and black pepper, to taste
- 4 pita breads or flatbreads
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1/4 red onion, thinly sliced
- 1/2 cup crumbled feta cheese
- 1/2 cup tzatziki sauce
- Fresh dill or parsley, chopped (for garnish)
Instructions
- In a bowl, whisk together olive oil, lemon juice, garlic, oregano, paprika, cumin, salt, and pepper to create the marinade.
- Add chicken and coat well. Cover and refrigerate for at least 1 hour (or up to 6 hours for deeper flavor).
- Preheat grill or skillet over medium-high heat. Cook chicken 5–7 minutes per side, until golden and fully cooked.
- Let chicken rest for 5 minutes, then slice thinly.
- Warm pita breads in a dry skillet or oven until soft and pliable.
- Assemble gyros: add sliced chicken to pita, then top with tomatoes, cucumber, onion, feta, and a generous drizzle of tzatziki sauce.
- Garnish with fresh dill or parsley and an extra squeeze of lemon before serving.
