Ingredients
- 1 lb pizza dough (store-bought or homemade)
- 2 tbsp olive oil, divided
- 1 whole garlic bulb
- 1 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup crumbled feta cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup heavy cream (or milk)
- 2 cups fresh spinach leaves
- 1/2 tsp dried oregano
- 1/2 tsp crushed red pepper flakes (optional)
- Salt and black pepper, to taste
- Fresh basil or parsley, for garnish
Instructions
- Preheat oven to 450°F (230°C). Line a baking sheet or pizza stone with parchment paper.
- Slice the top off the garlic bulb, drizzle with 1 tablespoon olive oil, wrap in foil, and roast in the oven for 30 minutes until soft and caramelized. Allow to cool slightly, then squeeze out the roasted cloves.
- Meanwhile, in a small skillet, heat 1 tablespoon olive oil over medium heat. Add spinach and sauté for 1–2 minutes until wilted. Season with a pinch of salt and pepper. Set aside.
- In a bowl, mix ricotta, roasted garlic, Parmesan, heavy cream, oregano, and a bit of salt and pepper to make the white sauce.
- Roll out the pizza dough on a floured surface to desired thickness and transfer to prepared pan.
- Spread the garlic-ricotta sauce evenly over the dough, leaving a 1-inch border for the crust.
- Top with sautéed spinach, mozzarella, and feta cheese. Sprinkle with crushed red pepper flakes if using.
- Bake for 12–15 minutes, or until crust is golden and cheese is bubbly.
- Remove from oven, drizzle lightly with olive oil, and garnish with fresh basil or parsley before slicing and serving.
