Ingredients
- 12 oz pasta (farfalle, penne, or linguine)
- 1 cup green peas (fresh or frozen)
- 1 cup asparagus, chopped into 1-inch pieces
- 1 cup zucchini, diced
- 1 small carrot, thinly sliced
- 2 tbsp olive oil
- 2 cloves garlic, minced
- 1/2 cup heavy cream or half-and-half
- 1/2 cup grated Parmesan cheese
- 1/4 cup fresh mint leaves, chopped
- 1 tbsp lemon juice
- 1 tsp lemon zest
- 1/2 tsp salt
- 1/4 tsp black pepper
- Fresh basil (optional, for garnish)
Instructions
- Bring a large pot of salted water to a boil. Cook pasta according to package directions. Add peas, asparagus, carrot, and zucchini during the last 2–3 minutes of cooking. Drain and set aside.
- In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
- Stir in heavy cream and Parmesan, cooking 1–2 minutes until slightly thickened.
- Add cooked pasta and veggies to the skillet. Toss to coat evenly.
- Stir in lemon juice, lemon zest, mint, salt, and pepper.
- Cook for another 1–2 minutes to heat through. Adjust seasoning as needed.
- Garnish with fresh basil or extra mint before serving.
