Description

Ingredients

  • 12 oz pasta (farfalle, penne, or linguine)
  • 1 cup green peas (fresh or frozen)
  • 1 cup asparagus, chopped into 1-inch pieces
  • 1 cup zucchini, diced
  • 1 small carrot, thinly sliced
  • 2 tbsp olive oil
  • 2 cloves garlic, minced
  • 1/2 cup heavy cream or half-and-half
  • 1/2 cup grated Parmesan cheese
  • 1/4 cup fresh mint leaves, chopped
  • 1 tbsp lemon juice
  • 1 tsp lemon zest
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • Fresh basil (optional, for garnish)


Instructions

  1. Bring a large pot of salted water to a boil. Cook pasta according to package directions. Add peas, asparagus, carrot, and zucchini during the last 2–3 minutes of cooking. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add garlic and sauté for 30 seconds until fragrant.
  3. Stir in heavy cream and Parmesan, cooking 1–2 minutes until slightly thickened.
  4. Add cooked pasta and veggies to the skillet. Toss to coat evenly.
  5. Stir in lemon juice, lemon zest, mint, salt, and pepper.
  6. Cook for another 1–2 minutes to heat through. Adjust seasoning as needed.
  7. Garnish with fresh basil or extra mint before serving.
