Ground Beef Enchilada Casserole is a hearty, layered Mexican-inspired dish made with seasoned beef, tortillas, cheese, and enchilada sauce—easy to assemble and perfect for feeding a crowd.
Ingredients
- 1 lb ground beef
- 1 small onion, diced
- 2 garlic cloves, minced
- 1 packet taco seasoning
- 1 can (15 oz) black beans, drained and rinsed (optional)
- 1 can (10 oz) diced green chiles (optional)
- 2 cups red enchilada sauce
- 8–10 corn tortillas, halved
- 2 cups shredded Mexican blend cheese
- 1/2 cup sliced olives (optional)
- Green onions or cilantro for garnish
Instructions
- Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
- In a skillet, cook ground beef and onion until browned; drain excess fat.
- Add garlic, taco seasoning, black beans, and green chiles; cook 2 minutes.
- Spread a thin layer of enchilada sauce in the baking dish.
- Layer tortillas, beef mixture, enchilada sauce, and cheese.
- Repeat layers, ending with cheese on top.
- Cover with foil and bake 20 minutes; uncover and bake another 10 minutes until bubbly.
- Garnish with olives, green onions, or cilantro.
Notes
- Use flour tortillas if preferred, but reduce layering time as they soften faster.
- Add corn or sautéed veggies for extra flavor.
- Pair with sour cream, salsa, or guacamole.
