Ingredients

  • 1 lb ground beef
  • 1 small onion, diced
  • 2 garlic cloves, minced
  • 1 packet taco seasoning
  • 1 can (15 oz) black beans, drained and rinsed (optional)
  • 1 can (10 oz) diced green chiles (optional)
  • 2 cups red enchilada sauce
  • 810 corn tortillas, halved
  • 2 cups shredded Mexican blend cheese
  • 1/2 cup sliced olives (optional)
  • Green onions or cilantro for garnish


Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet, cook ground beef and onion until browned; drain excess fat.
  3. Add garlic, taco seasoning, black beans, and green chiles; cook 2 minutes.
  4. Spread a thin layer of enchilada sauce in the baking dish.
  5. Layer tortillas, beef mixture, enchilada sauce, and cheese.
  6. Repeat layers, ending with cheese on top.
  7. Cover with foil and bake 20 minutes; uncover and bake another 10 minutes until bubbly.
  8. Garnish with olives, green onions, or cilantro.

  • Use flour tortillas if preferred, but reduce layering time as they soften faster.
