A cozy, festive chicken casserole baked with tender chicken, creamy cheese sauce, holiday herbs, and a buttery topping for a comforting winter meal.
Ingredients
- 2 lbs cooked chicken breast, shredded or cubed
- 2 cups shredded cheddar cheese
- 1 cup shredded mozzarella cheese
- 1 (10.5 oz) can cream of chicken soup
- 1 cup sour cream
- 1/2 cup milk
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried parsley
- 1/2 tsp dried thyme
- 1/2 tsp dried rosemary
- 1/2 tsp salt
- 1/4 tsp black pepper
- 2 cups cooked rice or cooked pasta (optional base)
- 1 cup crushed buttery crackers or breadcrumbs
- 3 tbsp melted butter
Instructions
- Preheat oven to 350°F (175°C). Lightly grease a 9×13 inch baking dish.
- If using rice or pasta as a base, spread it evenly in the bottom of the dish.
- In a large bowl, whisk together cream of chicken soup, sour cream, milk, garlic powder, onion powder, parsley, thyme, rosemary, salt, and pepper.
- Stir in the shredded chicken, cheddar cheese, and mozzarella until fully combined.
- Spread the chicken mixture evenly over the base (or directly in the dish if not using a base).
- In a small bowl, mix crushed crackers or breadcrumbs with melted butter.
- Sprinkle the buttery topping evenly across the casserole.
- Bake for 30–35 minutes or until bubbly and golden on top.
- Let rest for 5–10 minutes before serving.
Notes
- Use a rotisserie chicken to save time.
- Add thawed mixed vegetables for a heartier casserole.
- Substitute part of the cheddar with pepper jack for extra flavor.
