A fresh and flavorful layered dish featuring zesty honey-lime chicken stacked over creamy avocado rice for a vibrant, nutrient-packed meal.
Ingredients
- 2 boneless, skinless chicken breasts, diced
- 1 tbsp olive oil
- 2 tbsp honey
- 2 tbsp lime juice
- 1 tsp lime zest
- 1 clove garlic, minced
- 1/2 tsp chili powder
- Salt and pepper, to taste
- 2 cups cooked rice (white, jasmine, or brown)
- 1 large avocado, diced
- 1 tbsp fresh cilantro, chopped
- 1 tbsp lime juice (for avocado rice)
- Salt, to taste
Instructions
- In a bowl, whisk together honey, lime juice, lime zest, garlic, chili powder, salt, and pepper.
- Add diced chicken and marinate for at least 15–30 minutes.
- Heat olive oil in a skillet over medium heat and cook the marinated chicken until browned and cooked through.
- In a separate bowl, combine cooked rice, diced avocado, lime juice, cilantro, and salt. Gently mix.
- Use a round food mold or small bowl to layer the avocado rice on a plate, pressing lightly.
- Top the rice layer with the honey-lime chicken.
- Carefully lift the mold to reveal the stacked presentation.
- Serve immediately and garnish with extra cilantro or lime wedges if desired.
Notes
- For added heat, add crushed red pepper or jalapeño.
- Quinoa can replace rice for a higher-protein base.
- Greek yogurt drizzle makes an excellent creamy topping.
- Best assembled fresh to keep the avocado vibrant.
