Description
A soft, fluffy Keto Cheesy Focaccia made with almond flour and mozzarella, topped with herbs and extra cheese for a low-carb, bread-like comfort food without the carbs.
Ingredients
- 2 cups shredded mozzarella cheese
- 2 oz cream cheese
- 1 3/4 cups almond flour
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon garlic powder
- 1 teaspoon Italian seasoning or rosemary
- 2 tablespoons olive oil
- 1/2 cup shredded mozzarella or cheddar cheese (for topping)
Instructions
- Preheat oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
- In a microwave-safe bowl, melt mozzarella and cream cheese together in 30-second intervals until smooth.
- Stir almond flour, baking powder, salt, garlic powder, and seasoning into the cheese mixture.
- Add eggs and mix until a thick dough forms.
- Press dough evenly into the prepared pan.
- Brush the top with olive oil and sprinkle with additional cheese.
- Bake for 18–22 minutes until golden and set.
- Cool slightly, slice, and serve warm.
Notes
- Best served warm for the softest texture.
- Add olives or rosemary for classic focaccia flavor.
- Store refrigerated for up to 4 days.
