Description

A soft, fluffy Keto Cheesy Focaccia made with almond flour and mozzarella, topped with herbs and extra cheese for a low-carb, bread-like comfort food without the carbs.


Ingredients

  • 2 cups shredded mozzarella cheese
  • 2 oz cream cheese
  • 1 3/4 cups almond flour
  • 2 large eggs
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon garlic powder
  • 1 teaspoon Italian seasoning or rosemary
  • 2 tablespoons olive oil
  • 1/2 cup shredded mozzarella or cheddar cheese (for topping)


Instructions

  1. Preheat oven to 375°F (190°C) and line an 8×8-inch baking pan with parchment paper.
  2. In a microwave-safe bowl, melt mozzarella and cream cheese together in 30-second intervals until smooth.
  3. Stir almond flour, baking powder, salt, garlic powder, and seasoning into the cheese mixture.
  4. Add eggs and mix until a thick dough forms.
  5. Press dough evenly into the prepared pan.
  6. Brush the top with olive oil and sprinkle with additional cheese.
  7. Bake for 18–22 minutes until golden and set.
  8. Cool slightly, slice, and serve warm.
