Ingredients
- 1 unbaked 9-inch pie crust
- 1 1/2 cups granulated sugar
- 3 tbsp all-purpose flour
- 1/4 tsp salt
- 3 large eggs
- 1 1/2 cups whole milk
- 1/2 cup fresh lemon juice
- 1 tbsp lemon zest
- 2 tbsp unsalted butter, melted
- 1 tsp vanilla extract
Instructions
- Preheat oven to 175°C (350°F).
- Place unbaked pie crust into a 9-inch pie dish and crimp edges as desired.
- In a bowl, whisk together sugar, flour, and salt.
- Add eggs and whisk until smooth.
- Stir in milk, lemon juice, lemon zest, melted butter, and vanilla extract.
- Pour custard mixture into prepared pie crust.
- Bake for 45–55 minutes until center is set but slightly jiggly.
- Cool completely at room temperature, then refrigerate for at least 2 hours before slicing.
