Ingredients
- 6 bone-in, skin-on chicken thighs
- 2 tbsp olive oil
- 1 lemon, juiced and zested
- 2 tsp paprika
- 1 tsp garlic powder
- 1/2 tsp onion powder
- 1/2 tsp dried thyme
- 1/4 tsp cayenne pepper (optional for heat)
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 400°F (200°C) and line a baking sheet with parchment paper or lightly grease it.
- In a small bowl, combine the olive oil, lemon juice, lemon zest, paprika, garlic powder, onion powder, thyme, cayenne pepper (if using), salt, and pepper. Mix well to create the seasoning paste.
- Pat the chicken thighs dry with paper towels, then rub the seasoning mixture all over the chicken, making sure to coat each piece evenly.
- Place the seasoned chicken thighs on the prepared baking sheet, skin side up, and arrange them in a single layer.
- Roast for 35-40 minutes, or until the chicken is fully cooked through (internal temperature of 165°F or 74°C) and the skin is crispy.
- Remove the chicken from the oven and let it rest for 5 minutes before serving. Garnish with fresh parsley if desired and serve hot.
Notes
- If you prefer boneless, skinless chicken thighs, reduce the cooking time by about 10-15 minutes.
- For a smokier flavor, use smoked paprika in place of regular paprika.
