Description
Mini meatloaf muffins topped with creamy mashed potatoes, baked in a muffin tin for perfectly portioned, kid-friendly comfort food that looks like savory cupcakes.
Ingredients
- 500 g ground beef
- 1/2 cup breadcrumbs
- 1/4 cup milk
- 1 small onion, finely chopped
- 1 egg
- 2 cloves garlic, minced
- 2 tbsp ketchup
- 1 tbsp Worcestershire sauce
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 500 g potatoes, peeled and chopped
- 2 tbsp butter
- 1/4 cup milk or cream
- Salt to taste (for potatoes)
- Fresh parsley for garnish (optional)
Instructions
- Preheat the oven to 180°C (350°F) and lightly grease a muffin tin.
- In a large bowl, combine ground beef, breadcrumbs, milk, onion, egg, garlic, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix gently until just combined.
- Divide the meat mixture evenly among the muffin cups, pressing lightly.
- Bake for 20–25 minutes, or until the meat is cooked through.
- While the meatloaf muffins bake, boil the potatoes in salted water until fork-tender, about 15 minutes.
- Drain the potatoes and mash with butter, milk or cream, and salt until smooth.
- Remove meatloaf muffins from the oven and let cool slightly.
- Spoon or pipe the mashed potatoes on top of each mini meatloaf like frosting.
- Garnish with parsley if desired and serve warm.
Notes
- You can substitute ground turkey or chicken for a lighter version.
- Use a piping bag for a decorative mashed potato topping.
- Leftovers reheat well in the oven or microwave.
