Description

Mini meatloaf muffins topped with creamy mashed potatoes, baked in a muffin tin for perfectly portioned, kid-friendly comfort food that looks like savory cupcakes.


Ingredients

  • 500 g ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 cloves garlic, minced
  • 2 tbsp ketchup
  • 1 tbsp Worcestershire sauce
  • 1 tsp salt
  • 1/2 tsp black pepper
  • 1/2 tsp paprika
  • 500 g potatoes, peeled and chopped
  • 2 tbsp butter
  • 1/4 cup milk or cream
  • Salt to taste (for potatoes)
  • Fresh parsley for garnish (optional)


Instructions

  1. Preheat the oven to 180°C (350°F) and lightly grease a muffin tin.
  2. In a large bowl, combine ground beef, breadcrumbs, milk, onion, egg, garlic, ketchup, Worcestershire sauce, salt, pepper, and paprika. Mix gently until just combined.
  3. Divide the meat mixture evenly among the muffin cups, pressing lightly.
  4. Bake for 20–25 minutes, or until the meat is cooked through.
  5. While the meatloaf muffins bake, boil the potatoes in salted water until fork-tender, about 15 minutes.
  6. Drain the potatoes and mash with butter, milk or cream, and salt until smooth.
  7. Remove meatloaf muffins from the oven and let cool slightly.
  8. Spoon or pipe the mashed potatoes on top of each mini meatloaf like frosting.
  9. Garnish with parsley if desired and serve warm.

Notes

  • You can substitute ground turkey or chicken for a lighter version.
  • Use a piping bag for a decorative mashed potato topping.
  • Leftovers reheat well in the oven or microwave.
